As a kid I never really liked soup. Maybe it had something to do with growing up in Arizona where there’s no soup weather.

Now that I live somewhere with seasons – most of them cold, I have learned to love soup weather and the comforting soups that go with it.

As soon as fall hits, I'm ready for soup. This one post could last me all winter with all of these fabulous soups!!

I love Easter – everything about it. And like all fabulous holidays, an amazing feast is always part of the celebration. We always have a big ham and potato meal with carrots, green beans, rolls, jello salad, some dessert, and anything else we feel like tossing on the table. My favorite is the ham. yummmmm

Yum! Let’s jump right in and get started with the Easiest EVER Grilled Chicken marinade.

This is so easy, I’m not even sure it actually counts as a recipe. But easy is what we’re going for, right? And it’s oh so tasty.

You only need 2 ingredients and some chicken. Are you ready for the secret? Here goes…

It only takes 2 ingredients to make the easiest ever #grilled #chicken #marinade. Simple and delicious? That's exactly what I need!


Italian dressing and lemon pepper. That’s it! Here’s what you do: Sprinkle your chicken with lemon pepper then put it in a Ziploc bag. Pour a bottle of Italian dressing over the chicken, seal the bag, and put it in the fridge to marinate. A few hours later – or the next day – take out your chicken and grill it. That’s it! Easy and delicious!! You can use *any* Italian dressing. I have used regular, zesty, light… and even this fancy “restaurant recipe,” all with great results. Sunday Chicken Supper

There’s just something about a Sunday that makes me want comfort food. Maybe it’s because growing up I remember two typical Sunday meals: Mom’s crock pot roast and Dad’s mac & cheese. Talk about comfort food… yum!

I still love a Sunday roast, and homemade mac ‘n’ cheese is my go-to comfort food, but I have also added a few new favorite meals to our Sunday evenings.

Sunday Chicken Supper is such a great Sunday meal! For one, it actually announces itself as the perfect Sunday meal right in its name. Can’t go wrong there! And doesn’t “supper” just sound more homey than dinner?

Besides that, it’s simple to throw together, takes minimal effort, and tastes delicious.

Crock Pot Chicken comfort food with veggies and bacon = the PERFECT Sunday meal


Sunday Chicken Supper

  • 4 medium carrots, cut into 2-inch pieces
  • 1 medium onion, chopped
  • 1 celery rib, cut into 2-inch pieces
  • 2 c fresh green beans, cut into 2-inch pieces
  • 2 small red potatoes, quartered
  • 1 broiler/fryer chicken (3 to 3-1/2 pounds), cut up
  • 4 bacon strips, cooked and crumbled
  • 1 1/2 c hot water
  • 2 tsp chicken bouillon granules
  • 1 tsp salt
  • 1/2 tsp dried thyme
  • 1/2 tsp dried basil
  • Pinch pepper

In a slow cooker (5 or 6 quart is a good size for this recipe), layer the carrots, onion, celery, green beans, potatoes, chicken pieces, and bacon. If you don’t want to cut up a whole chicken, you can use pieces already cut up – like thighs or breasts – but meat really has a great flavor when it’s cooked with the bones.

In a separate bowl, combine the water, bouillon, salt, thyme, basil, and pepper. Mix it up and then add it to the crock pot. Don’t stir it; just pour it over the top. Cover and cook it on low for 6-8 hours or until the veggies are tender and chicken juices run clear. When it’s done, set the chicken and veggies on a platter to serve, and then you can thicken the juices to use as a gravy.

My family happily gobbles this down every time I serve it, and I love that it’s pretty healthy! (The bacon is more of a condiment… like an herb for seasoning.) Of course, it’s great on a weekday, too.

Chicken Vegetable Soup

Happy National Soup Month!

I didn’t used to love soup. I think it had something to do with growing up in Arizona. When it’s summer 9 months out of the year, there’s just not a lot of soup weather.

Besides… Something that is served as an appetizer isn’t my idea of a filling meal. I mean, am I right or am I right?

But then I moved to Utah where it’s winter 9 months out of the year. Well, some of those months are technically spring and fall, but Mother Nature tends to show her bipolar side in Utah and those seasons end up looking a lot like winter, too.

Anyway… my point? It’s cold.

Most of the time.

And cold weather is perfect soup weather, so I have learned to love soups.

January is National Soup Month, and I have been pulling out our favorite soup recipes and trying some new ones. I have also been a bit under the weather since the day after Christmas.

Yep, it has been more than 3 weeks. Blah.

So naturally I pulled out this homemade chicken noodle soup. I LOVE it. It’s full of tasty veggies and delicious broth. I like to use a rotisserie chicken for the extra flavor (and ease), and I tend to put in *heaping* cups of veggies.

It will warm you up all the way down to your toes.

Vegetable Chicken Noodle Soup

  • 1 c chopped onions
  • 1 c chopped carrots
  • 1 c chopped celery
  • 1 garlic clove, minced
  • 2 tsp olive oil
  • 1/4 c flour
  • 1/2 tsp dried oregano
  • 1/4 tsp dried thyme
  • 1/4 tsp poultry seasoning
  • 6 c reduced-sodium chicken broth
  • 4 c cubed peeled potatoes
  • 1 tsp salt
  • 2 c cubed cooked chicken
  • 2 c uncooked yolk-free wide noodles
  • 1 c fat-free evaporated milk

Start with a big pot. Saute the onion, carrots, celery and garlic in oil for about 5 minutes or until they get tender. Stir in the flour, oregano, thyme, and poultry seasoning until blended, then saute for another minute. Add the potatoes and salt, then gradually add the broth and bring it to a boil. Reduce heat, cover, and simmer 15-20 minutes or until potatoes are tender. Stir in the chicken and noodles. Simmer for another 10 minutes or until noodles are tender. Reduce heat. Stir in the milk and heat through (do not boil). Makes about 2 quarts of delicious soup.
