This sweet Christmas Countdown is the perfect way to remember to #LighttheWorld for 25 days in December

Fall is my favorite season, but December is my absolute favorite time of year. I love the feeling of goodwill that seems to abound no matter where you turn. Everywhere I go, people seem to be a little kinder, a little more loving, a little more giving.

I believe that’s the light of Christ in action that touches people’s hearts even more at this time of year. As we act on those feelings of kindness and love, we spread the light of Christ.

I am so completely in love with the #LighttheWorld initiative from the Church of Jesus Christ of Latter-day Saints at mormon.org that reminds us to take time every day to share that light.

Sometimes we think service has to be a big, huge ordeal, and sometimes it is, but the truth is we can touch someone’s life every day in small, simple ways that make a big difference.

I wanted to find a way to encourage my family to be a little kinder, do a little more, and look for ways to serve others every day. In a house full of girls, chocolate is an incredible motivator, so I put together this little chocolate Christmas countdown – a simple reminder to do something every day to shine a little light on someone’s day.

After I made the cute Christmas tree, it only took me a few minutes to put together a countdown for everyone in the family. We all need our own, after all. I printed out this Christmas tree on regular paper, put it in a dollar store document frame, and stuck a chocolate candy to each circle with Scotch tape. Super simple and I love how it turned out.

This one is last year’s with a variety of Hershey kisses on the tree and Rolos for the tree trunk. This year, my nieces put on the chocolate when they were here for Thanksgiving, and we added more Rolos and some mini peanut butter cups. They’re a little bigger but totally worth the smooshed look for some peanut buttery yumminess.

Every day as each of us does an act of service, doing our part to Light the World, we celebrate the sweetness of service with a piece of chocolate. Having the visual reminder helps us keep service in our minds, always looking for ways to help others. The countdown helps us keep track of the days, knowing we’ve helped to Light the World that day.

We can all touch the lives of others – in our own ways, in our own spheres – and when enough of us light another’s life, we can Light the World.

Toffee Cheesecake Bars

Now that Thanksgiving is over, it’s time to think about Christmas treats! But before we get started let me remind you about The 12 Days of Christmas Wish Lists to help you find the perfect gifts for everyone on your list. Now on to the treats. Every Christmas when I was a kid, we would put together plates of treats to give the neighbors. I have fond memories of piling everyone into the car with our hands full of plates, running up to doors and delivering our favorite holiday treats.

As soon as Steve and I had a family of our own, it seemed only right to carry on the tradition, but of course I couldn’t just fill the plates with the same things year after year. It’s too much fun to try new things and find new family favorites.

Toffee has been and always will be my favorite holiday treat. My dad makes it just like my grandma, and it’s a true labor of love as he singes his eyebrows getting it just right. After the almond-filled toffee sets up, he melts a huge Hershey bar over each side and sprinkles chopped almonds over the whole thing to finish it off. Mm, mmm. My absolute fave.

I always have to have some toffee at Christmas. I don’t live close enough to get some from my dad every Christmas, so on the years I decide to keep my eyebrows and don’t make my own I need another toffee fix. These Toffee Cheesecake bars are just the thing. Not only do I get my toffee fix, but… cheesecake.

Mmm, cheesecake.

Toffee Cheesecake Bars

Crust:

  • 1 1/4 c flour
  • 1 c powdered sugar
  • 1/2 c cocoa
  • 1/4 tsp baking soda
  • 3/4 c butter

Filling:

  • 1 pkg (8 oz) cream cheese, softened
  • 1 can (14 oz) sweetened condensed milk
  • 2 eggs
  • 1 tsp vanilla
  • 1 pkg (8 oz) toffee bits, divided

Start with the crust. Combine the flour, powdered sugar, cocoa and baking soda. Cut in the butter until it gets crumbly. Press into a 9×13 baking pan. You don’t need to worry about greasing the pan because 3/4 c butter. Seriously. Toss that in the oven and bake at 350 for 15 minutes.

While your crust is cooking, it’s time to make the filling. In a bowl, beat the cream cheese until it’s fluffy. Then add the milk, eggs, and vanilla. Beat that all together until it’s smooth. Stir in 1 cup of the toffee bits and pour it all over the hot crust. Toss it back in the oven and bake for another 25 minutes, still at 350, until it’s set and the edges just begin to brown.

It’s starting to look amazing, right? Pull it out of the oven and let it cool for 15 minutes. Then sprinkle the rest of the toffee bits (1/2 c) evenly over the top. Let it cool completely and toss it in the fridge for a few hours until it’s cold. Then serve it up or slice it up for your neighbor treat plates.

This is a great treat to make ahead for parties since you can just keep it cold in the fridge and pull it out when you’re ready to wow your guests. And really, what could be better than cheesecake and toffee?? Yum!

There are days when it feels like my phone is permanently welded to my hand. All of that work we do on our phones really drains the battery. A few months ago my mother-in-law bought me this Jackery bar for my birthday, and I am totally in l0ve. This handy little portable charger is even faster than my wall charger when it comes to charging my phone, especially while I’m still using it. I have taken it on vacation, to blogger conferences, and while I’m running around town on errands or picking up the kids. My Jackery has become a must-have item for me.

As a blogger, I spend a LOT of time sitting – I mean way. too. much. time. sitting – and not nearly enough time sleeping. I love this Fitbit Flex Wireless Tracker for tracking activity and sleeping. During the day, it tracks steps, distance, and calories. At night, it monitors your sleep cycle and wakes you in the morning. The lights indicate how you’re doing at reaching your personal goal. While it’s kind of sad that I need a reminder to get up and move or stop working and go to sleep, it’s just reality.

 

4. Craft Table

Creating a perfect office work space is something I’m still working on, and this craft table is going on my list of things I want in my office. I love all the nooks and crannies to hold all the stuff I need daily, along with the HUGE work space that isn’t cluttered because everything is stored away in the nooks and crannies. Love, love, love.

 

5. Mixing Bowls

Is it weird that I’m totally addicted to mixing bowls? As a blogger who often posts recipes, I love to have cute dishes to use in my posts, but I also just love to buy any cute bowl I see, regardless of whether it will have a place or a purpose. 6. Laptop Tote

I’m also a sucker for a great bag. I have been known to buy things I don’t really need just for the free tote that comes with it. I know, I know… I’m a sucker.
